A delicious wholesome meal that can be thrown on in the morning and enjoyed in the evening - serve with rice or mashed potato or sweet potato. This recipe is great for lunch the next day - if there's any left!

Ingredients

  • 1 tsp butter

  • 1 brown onion diced
  • 2 cloves garlic minced
  • 3 chicken breast
  • 1 tin coconut milk
  • 1 tbsp Changing Habits Vegetable Stock Powder

  • cracked Changing Habits Pepper to taste

  • 1/2 cup sun-dried or semi dried tomatoes roughly chopped
  • 4 tbsp lightly dried basil (save some to garnish at the end)
  • 1/4 cup shaved parmesan
  • handful baby spinach leaves

  • 3 cups cooked rice (optional) or mashed potato or sweet potato

Directions

  1. Heat a pan over a medium heat.
  2. Add the butter, onion, garlic and chicken breast.

  3. Lightly fry on both sides for approximately 1-2 minutes. Remove from the heat and transfer into the slow cooker.

  4. Place the coconut milk, vegetable stock, pepper, sun-dried tomatoes and the basil into a large jar and mix well. Pour into the slow cooker over the chicken breast.

  5. Cook on low for 8 hours.

  6. When the 8 hours is up turn off the heat and stir through the baby spinach leaves and parmesan and place the lid back on for a further 15 minutes while you make the rice or mash.

  7. Split the chicken and sauce over the rice or mash in 4 bowls.

  8. Sprinkle with extra lightly dried basil and cracked pepper (if needed).

  9. Enjoy!
